I’m trying something new today — my first video blog! You guys have been seeing my Black Bean Quesadillas on my menu each week. We eat them a lot, usually twice a week. I love them, because they are delicious, healthy, and inexpensive! I usually serve them with some homemade pico de gallo and a side of fruit.
